On our way home from Nan, we stopped in the lakeside town of Phayao, famous for its grilled fish that is served in any number of lakeside restaurants. The fish is farmed in the large lake and grilled covered with salt and stuffed with special "pandamus" leaves (called "bai toei" in Thai). We greatly enjoyed our lunch that day....

Looking out from the restaurant, we saw a squid cart go by. They run the cooked squid through the wheeled press shown to the vendor's right hand. Less delicious than the fish.
